What is Bird Nest?

This unusual soup has been a part of Chinese cuisine for generations. Chinese people began consuming bird’s nest soup during the Ming Dynasty and in some tales, its believed Zhen He (鄭和), who was a Chinese explorer, diplomat, and fleet admiral, was the first person in Chinese history to eat birds nest soup.

 

How to cook Bird Nest?

1. Soak the birds nest overnight in cool water.

2. The nest should be clean of all impurities.If you happen to get birds nest that contains impurities, its best to clean the nest one more time. Bring a pot of water to a boil, and boil the birds nest for 10 minutes, then drain and rinse with cool water.But since this birds nest is so clean, all we needed to do was soak overnight and drain.

3. Bring a pot with 6 cups of water to a low simmer. Add in the drained birds nest and jujubes.

4. Keep the heat on low you dont want a hard, rolling boil (which would break the delicate birds nest). Aim for the smallest bubbles possible.

Cook for 30 minutes 2 hours. The timing really depends on the quality of the birds nest that you have. For Golden Nests products, it only took 30 minutes of cooking to get a gelatinous texture. If you over-cook the birds nest, it will become gummy and break apart, ruining the very expensive delicacy!

Taste the birds nest it should be soft, gelatinous, slippery-like.

5. Add in 4 medium chunks of rock sugar. You can turn off the heat and just let the sugar slowly dissolve. Taste and add additional sugar if youd like. The flavor should be delicately sweet.

6. Serve warm.

Peach gum is the resin from peaches grown on Chinese wild peach trees. Also known as the serum, it is widely considered as the most valuable part of the peach tree. How to cook Sea cucumber?

1. First rinse off the salt on the sea cucumbers surface and the sand inside its cavity thoroughly. Be gentle: the sea cucumber could fall apart while cooking if its membrane is broken at this stage.

2. Soak the sea cucumber in clean water for two days, changing water every day. The sea cucumber cant be in contact with any salt or oil until it gets soft. Some of the new available varieties take longer to soften. You can adjust the soaking time based on the situation.

3. Slowly cook the soaked sea cucumber in boiling water for 20 to 30 minutes. Turn off the heat afterwards, cover and let cool. Cut it open and remove the organs inside. If the sea cucumber still feels hard, repeat the boiling process for two or three times, until it turns completely soft.

4. Cook the sea cucumber as desired or store it in the freezer once it cools down. In terms of cooking, the lightly flavoured sea cucumber should be paired with something that has a strong taste. Braising with spring onions, dried shrimp roe or abalone sauce is a more manageable option at home.

燕窝是一种叫“金丝燕”的雀鸟,利用苔鲜、海藻和柔软植物织维混合他们的羽毛和唾液胶结而成的燕窝,作为藏身之所。人们把这种燕窝取下来,经过提炼、选拣就成为名贵的燕窝。“金丝燕”每年结巢三次,第一次结之巢厚而洁白,由于金丝燕经过漫长的冬季,有较长时间休养生息,唾液质素较优,又恰逢印尼雨季,食物充沛,体内储存了足够的养份,,所以筑起来的巢较优较厚,质地细腻白皙,杂质与羽毛极少,形状特佳,盏形状优美,称为头期极轻毛盏,是燕窝中之极品, 6A 王妃盏的原料便选自2月~4月采收的优质头期极轻毛燕盏。

 

燕窝烹调的方法:

1. 用过滤壶准备过滤水。
2. 把燕盏放入干净容器中,倒入过滤水完全没过燕盏。 静置泡发四小时以上,至燕盏完全泡发开至通透。期间检查下燕角部位稍软就可以用手撕开或者剪刀剪开(燕盏角会比较厚,不撕开就需要泡比较长时间)。
3. 泡发好的完整燕盏,沥干水分后重量大约是原重量的67倍,手感软而有弹性。把泡发好的燕盏放入小筛网中沥干,倒掉浸泡的水,并将泡发的燕窝用过滤水冲洗干净。
4. 用小镊子配合,顺着燕窝的纹理,把燕盏撕开成丝状,同时挑出小杂毛。
5. 挑好的燕窝丝放入炖盅,加入过滤水,水量高过燕窝一指节。
6. 加盖后,放入锅内,锅中水位至炖盅一半高,隔水慢火炖40分钟左右。炖煮好的燕窝应该是胶状并伴有蛋白清香。

 

燕窝储藏的方法:

密封冰箱保鲜保存。彻底晾干后(不可阳光直晒),密封阴凉处保存。

1. 雪燕泡发后会涨大30-50倍。
2. 取雪燕浸泡在清水当中8-10小时(雪燕大颗的话可能需要泡更久时间)
3. 待雪燕完全泡开后,会变成长条状晶莹剔透如燕窝一般的细丝,清水冲洗3遍后,用镊子拣出树皮等杂质。
4. 剔除杂质后放入炖盅内加入清水,雪燕和清水比例为1:2左右,炖盅外水量没过炖盅一半即可。
5. 隔水用大火烧开后转为小火炖30-45分钟左右即可。
6. 切忌不能炖煮超过1小时,雪燕会化成水。
7. 食用时:按每人每次3克。

3.花胶为胶质极重之物,容易黐底,煲时宜用竹笪垫底,以防烧焦。

4.煮用时应用姜、葱、油、盐、烧酒起镬,放入水,待水滚,把花胶放进沸水滚,约15分钟以除腥味。

5.花胶煲得时间长便会渐渐溶化

甜品花胶:

1.把花胶温水洗一下,放入炖盅,加牛奶、红枣、桂圆肉、一勺即食燕窝;镉水加热10分钟;

⒉洗净排骨,出水。

⒊锅中注入适量的清水煲滚,加入所有材料煲滚,转慢火煲3小时,加盐调味,即可饮。

海参的烹饪方法?

三种超正确的海参食用方法:

  1.拌凉菜
把海参切成方便入口的“丝 片或块”状,拌上些酱油等调味品加入自己喜欢的配菜。(切忌与醋同食用,食物相克)

  2.煮粥吃:海参小米粥的做法
材料:小米,蔬菜,海参,姜丝,葱花
做法:
1、小米淘洗干净,用清水泡上;
2、蔬菜和海参洗净,切姜丝和葱花,海参切片;
3、汤锅放入足量的水,水沸之后放入小米,滚锅后下海参,再次滚锅后继续煮上约5分钟,其间不停用勺子搅拌;
4、加入姜丝,盖上锅盖,转最小火熬煮,期间不要打开锅盖;
5、大约25分钟后,开盖,加入1小勺浓缩鸡汁,搅拌混合,大火滚煮2分钟,最后撒上适量的盐,加入白胡椒粉调味,滴上几滴香油,撒上葱花,即可关火,盛碗温食。
小诀窍
做粥的时候要注意上述步骤,在水沸的时候加入小米,滚锅后下海参再次滚锅;根据食材估计成品量,水要一次加足,转最小火熬煮的时候不要开盖,直至完全靡合出香,最后几分钟再调味。

3.海参蒸蛋
原料:鸡蛋3颗、即食海参1
辅料:小香葱两根、生抽、香油
1. 温水调蛋液,蛋液和水的比例11.5,如果想硬一点的,可以调整比例为11
2. 蛋液过筛,滤过的蛋液蒸出来更加细腻。
3. 如果滤过的蛋液表面还有小气泡可用牙签扎破,这样蒸出来的蛋羹平整如镜面。
4. 入锅盖上保鲜膜或盖子,防止水滴渗入起蜂窝。
5. 利用这个时间取1个即食海参,用开水焯一下水,切成粒,小香葱切碎。
6. 蛋羹出锅后,撒海参粒、少许香葱粒、生抽和香油调味即可。

更多例如葱烧海参、鲍汁海参等烹饪方法,均为热锅无油条件下,加葱段快速翻炒滴入耗油汁即成。
